Vegetable Stew Recipe

Making a tastyVegetable Stew with our bamboo cutlery set vegetable stew is a great way to use up any sad looking vegetables you have left in your fridge to create a nutritious meal. Feel free to add any vegetables you have to the stew. Plus, this recipe is great for batch cooking and is safe to freeze.

Serves 4

Ingredients

  • 1 onion
  • 4 small carrots
  • 2 parsnips
  • 1 large/ 2 small potatoes
  • 2 sweet potatoes
  • 2 celery sticks
  • 2 peppers
  • 3 cloves garlic
  • 2 tsp paprika
  • 1 tsp turmeric
  • ½ tsp ginger
  • Salt
  • Pepper
  • 1 tsp chilli powder
  • 2 tsp dried thyme
  • 2 tins tomatoes
  • 300ml vegetable stock


 

Method

1. Cube potatoes and sweet potatoes and boil for 20 mins until starting to soften

2. Meanwhile chop all vegetables into slices or cubes

3. Fry the onion for 5 mins

4. Add rest of vegetables and spices and fry for a further 5 mins

5. Add the potatoes to the mixture once boiled

6. Add tinned tomatoes and stock

7. Leave to simmer for 1 hour or until the vegetables are tender

8. Serve with crusty bread to soak up the sauce
